Healthy no bake energy balls. Bright apricot cookies for every day.

Ingredients:

  • 2 cups (170gms) unsweetened shredded coconut
  • 1¼ cups packed dried apricots (250gms)
  • 2 teaspoons orange zest
  • 2 tablespoons honey, maple syrup, or raw agave nectar
  • 1 teaspoon vanilla
  • 2 – 3 tablespoons freshly-squeezed orange juice
  • 6 tablespoons chia seeds, poppy seeds

Cover apricots in boiling water and let them soak for 20 to 30 minutes, until they are soft and pliable. Then combine all together and blend. It will be hard. Add an orange juice if a mix is too dry. Roll balls and coat them into seeds.

How about healthy cookies for any day? There many recipes of no bake cookies. Cute, fast, delicious and healthy. But what form they are? Is it circle? Yeah? Recommend you to try something new. Use cookies cutters to change the form of your healthy cookies. There are 3 different way how to do it.
1) Spray the inside of your cookie cutters with non-stick spray. Fill form with mixture. Use spoon to do it. Than freeze and remove. Better way is to use steel cutter. Kids love hero and animals cookies. Try Batman cookie cutter! These cutter are high quality and perfect for any you deserts.

2) Use silicon molder. Spray  you mold and fill with warm mixture. After 3-4 hours remove and enjoy. Don’t use large form. Heart mold is very cute!

3) Distribute the weight of baking paper. When it cools down a little – Use cookie cutter. Carefully remove with a cutter insert on table or paper. Remove the cutter. Leftovers can be used for the decoration of cakes and other desserts. Or warm up and create a new cookie. Plastic multi-size cookie cutters allow to create any size of cookies.

Easy no bake peach cheesecake

Cracker crust:

  • 1½ cups graham cracker crumbs
  • 2 tbsp finely shredded coconut
  • ¼ cup brown sugar
  • 7 tbsp melted butter

Cheesecake:

  • 1 package cream cheese (8 oz)
  • 3 cups store- bought whipped cream
  • 1 cup powdered sugar
  • ⅓ cup melted white chocolate
  • ⅓ cup small peach slices

Topping:

  • 1 can sliced peaches
  • 1½ cup peach jam
  • ¼ cup water

There are some tips

  • Blot excess juices on paper towels.
  • Allow this cheesecake to set overnight or at least 12 hours.
  • Don’t use low-fat or fat-free or sugar-free whipped cream.
  • Use more or less water. It depends on different brands of jams which have varying consistencies.
